The Umami Multiplier: While I+G has little umami taste on its own, it acts as a massive multiplier when combined with glutamates (like MSG or natural glutamates found in meat and cheese). Mixing just 2% of I+G with 98% MSG creates four times the flavour-enhancing power of MSG alone.
Sodium and MSG Reduction:
Because it is roughly 40 times more powerful than standard MSG, food producers can use incredibly small amounts (typically 0.1% to 0.3% of the total formulation) to achieve an intense savoury punch. This allows brands to cut down on both added salt (sodium chloride) and overall MSG content without sacrificing taste.
Production:
Most commercial I+G is produced via microbial fermentation, frequently using an all-vegetable growth medium like tapioca starch.
However, because the individual components can sometimes be derived from animal or fish byproducts, strict vegetarians or vegans should check for specific “vegan” certifications on retail packaging.
