Carmoisine (also known as Azorubine, E122, or Food Red 3) is a synthetic azo dye, commonly used in food-grade applications to produce a vibrant reddish-pink to maroon color. Due to its high water solubility, heat stability, and resistance to light, it is frequently used in heat-treated foods and beverages.
